A rustic meat soup that can be cooked with beef, pork or a whole chicken along with vegetables. Cooking the soup with marrow bones is also very tasty!
In Hungary, the soup is usually served as a starter in a small soup bowl together with soup noodles - also called tészta . A trick for getting a clear broth is to let a peeled potato boil in the saucepan!
This recipe is a variation of soup that is cooked with a whole chicken - or hen if you can get it! In
Ingredients:
- 1 whole chicken with bones
- 1/2 celery root
- 1 kohlrabi
- 3 carrots
- 2 parsley roots
- 1 whole firm potato
- 1 large yellow onion
- 1 whole garlic
- a large bunch of parsley with the stems still on
- about 10 whole black peppercorns
- about 1/2 tbsp salt
- water
- Hungarian pasta - soup noodles
Do this:
Place the chicken in a large pot that holds at least 5 liters. Pour cold water over the chicken so that it covers it well and bring to the boil. Skim the soup carefully as foam forms on the surface!
When the broth has stopped foaming, add the whole, peeled and rinsed vegetables (the garlic can be cut in half "over the belly"). Add whole black peppercorns and salt. Then add the parsley sprigs on top and cover with a lid!
Let the soup simmer over low heat until the chicken is tender and the meat is almost falling off the bone. Remove the chicken and vegetables with a slotted spoon and set aside in an ovenproof dish. Save the root vegetables but the potatoes can be composted! Strain the broth and wash the saucepan if necessary. Pour the broth back into the saucepan. Meanwhile, cook the soup noodles in a separate saucepan.
Cut the chicken and vegetables into bite-sized pieces and portion them into deep plates. Pour the piping hot broth over them and add a few spoonfuls of cooked soup noodles . Top with fresh chopped parsley and enjoy!
Tip! Do you have any vegetables and mushy onions left over? Blend everything together with a hand blender to a smooth puree with a little sunflower oil and season with freshly grated garlic and salt. Spread the puree over a slice of toast and enjoy with the soup.
