Mákos Pancake

Crispy pancakes filled with poppy seeds!

Serve these pancakes as a tasty snack or dessert. Hungarian pancakes are baked thin in a cast iron pan with butter. The batter is slightly thicker than our Swedish pancakes and contains carbonated water.

Ingredients:

About 10 pancakes:

3 eggs

2 cups milk

1.5 dl carbonated water

4 dl wheat flour

1 pinch salt

2 tsp vanilla sugar

butter for frying

Filling:

120g ground poppy seeds

1 dl icing sugar

1 teaspoon vanilla sugar

1 cup milk

3 tbsp raisins (can be omitted)

Do this:

Lightly beat the eggs and pour in the milk and soda water. Then beat in the flour, salt and vanilla sugar until you have a smooth, thick batter. Let the batter rise for a few minutes.

Fry the pancakes until golden brown in a cast iron pan with butter. Shake the pan to distribute the batter evenly. Add a new pat of butter between each pancake!

Heat the milk for the filling and pour into a bowl with the dry ingredients. Spread the filling over the pancakes and fold them in half twice. Dust the pancakes with icing sugar and serve warm!
