Fruit soup from Erdély

Cold fruit soup from Erdély or Transylvania is a simple and refreshing meal during the summer. It can be eaten as a simple lunch or as a starter for a full meal.

The soup can be varied with the fruits or berries that are in season. This recipe is based on cherries but you can just as easily swap it out for mixed garden berries.

Ingredients:

500 g sour cherries (or cherries, pitted)
1.5 dl sour cream
1 tbsp vanilla sugar
2 tablespoons sugar
1 cinnamon stick
5 cloves
3 star anise (can be omitted)

Do this:

Rinse and pit the cherries. Place them in a saucepan and add the vanilla sugar, sugar, cinnamon stick, cloves and star anise. Pour in water so that the cherries are covered by about 1–2 cm. Cook over low heat for 10–15 minutes, then skim off the soup.

Add the sour cream and simmer for another 5–10 minutes. Remove from heat and let cool. Refrigerate for a few hours. Serve cold.

Tip! Use a PIERCER to easily pit cherries, olives, etc.
