The nutty taste of chestnuts, browned salty butter and dark chocolate together form a divine flavor combination that just has to be experienced. These festive chocolate truffles are perfect for Christmas as well as... any day in fact!
We use a chestnut puree that is sweetened and flavored with rum and vanilla! If you want to add orange flavor, boil and reduce pressed orange juice until only a flavorful oil remains. Then drop into the truffle mixture and mix together!
Ingredients:
125g dark chocolate
1 dl whipping cream
2-3 tablespoons browned butter
100g Chestnut puree
Chocolate to dip the truffle in:
about 200g dark chocolate
Do this:
Mix all the ingredients for the truffle mixture in a saucepan and let it melt together over low heat. Then let the truffle mixture set in the refrigerator for at least 4-5 hours.
Finely chop the remaining chocolate and melt 1/3 over a simmering water bath. When the chocolate has melted, remove the bowl from the heat and mix in the remaining 2/3 of the chopped chocolate. Stir until all the chocolate has melted. This will temper the chocolate and allow it to solidify at room temperature!
Roll the truffles out of the batter and quickly dip them in melted chocolate. Feel free to drizzle melted milk chocolate over them as a decoration or decorate with orange zest.
